You’ll love the sweet rich flavour of coconut combined with vanilla, but it’s hemp seeds that make this interesting recipe a great protein-dense snack or treat to finish any meal.
1. In a food processor fitted with a metal blade, process coconut butter, coconut nectar, coconut oil, and vanilla until smooth. Add hemp seeds and shredded coconut and pulse about 8 to 10 times to combine ingredients.
2. Transfer to a bowl. Using a tablespoon, divide 15 equal portions and drop onto prepared baking sheet lined with parchment or wax paper. Freeze for 15 minutes. Serve immediately or cover and refrigerate for up to 7 days.
For chocolate lovers, you can make chocolate haystacks, just add 3 tbsp of raw cacao powder in step 1 above.
When purchasing shredded coconut, look for unsweetened and unsulphured. Medium shred will work best for this recipe but any type will do. This recipe makes approximately 15 small haystacks.
